Dad’s Garlic & Herb Garden Skewers

My dad has always prioritized healthy eating in my household. He always said, “think of your body as a car. A car that is well taken care of, given the right fuel, cleaned, and serviced appropriately will last longer than that cared for haphazardly.” He is now in his 70s and most people think he’s in his 50s! Growing up, when my dad kicked on the grill in the summer, outside of all the meats we were going to enjoy, he always assigned me the task of preparing the skewered veggies. I always challenged myself to make the veggies taste better and better each time so sharing this recipe using my own product is incredibly sentimental. Wow, 14 year old me would be so proud. This grilled Garlic & Herb Garden skewer will literally have you reaching for more.

Ingredients

  • 2 tsp Holy Grail Spice Blend
  • 1 Zucchini
  • 1 Summer Squash
  • 1 Red Onion
  • 1 Bell Pepper
  • 1 tbsp Olive Oil 
  • 1 tsp salt
  • 1 tsp garlic, minced
  • 2 tbsp butter
  • 1 tsp fresh rosemary, finely chopped

Servings: This meal will comfortably feed 4 people.

Directions

  1. Rinse your veggies, cut them into uniform sizes then toss them with oil and a good sprinkle of Holy Grail Spice Blend and salt.
  2. Skewer them up like a garden bouquet ready to be grilled!
  3. Prepare aromatic garlic butter - melt butter in a small saucepan over medium heat then add minced garlic until it’s toasted to a golden brown then toss in your fresh rosemary. Set this aside.
  4. Grill your skewered veggies each side for 3 minutes until they’re charred and tender—just enough to bring out that sweet, smoky edge.
  5. Drizzle with the prepared garlic butter. Serve alongside Jollof and taste the harmony.
