Salmon Salad with Herb Honey Dressing
A summer salad that’s bright, fresh, and perfect for a light, flavor-packed meal. Growing up, like many girls in their teens in the U.S, I sort after various diet fads but one thing that never left me was using the same creativity I had when cooking delicious Ghanaian dishes into my salads. I enjoyed experimenting with different ways to make a salad delicious and interesting. This recipe is my go-to salad recipe. I change out the fruits based on the season. In the summer, I use fresh strawberries and blueberries but in the winter months, I switch it out to apples, orange slices, and even pomegranate. Can’t wait for you to try it.

Ingredients
- 4 cups Spring salad mix
- ½ cup Fresh strawberries, sliced
- ½ cup Blueberries
- 2 tbsp Nut mix for crunch
- ½ cup Cherry tomatoes
- ¼ cup Red Onions
- 2 tsp Holy Grail Spice Blend
- 2 tbsp Olive Oil
- Salt, to taste
For Dressing
- 1 tsp Holy Grail Spice Blend
- 2 tsp olive oil
- 1 tsp honey
- 1 tsp Dijon mustard
Servings: This meal will comfortably feed 4 people.
Directions
- Season salmon with Holy Grail, salt, and olive oil. Bake at 400°F for 6 minutes.
- In a bowl, toss salad greens, cherry tomatoes, and red onions with a splash of olive oil.
- Place the salad on a plate, layer with berries, nuts, and salmon bites.
- Drizzle with a sweet and tangy dressing made from Holy Grail, olive oil, honey, and mustard. It’s summer on a plate!
