Jollof Burrito Recipe

Items Needed:

2 cups Already Prepared Mama’s Jollof Simmer Sauce
1 tbsp Mama's Holy Grail Spice Blend
1 1⁄2 lbs Boneless, skinless Chicken Thighs (about 6 chicken thighs)
2 tbsp Cooking Oil (any oil you prefer to cook with)
1⁄2 tsp Chili Powder
Salt to taste
Flour Tortilla, medium (feel free to use large size tortilla or any burrito wrap you prefer )
1⁄2 cup of Black Beans
Shredded Cheddar Cheese
Sour Cream
Shredded lettuce

Homemade Guacamole:

1 Avocado, ripe
1 Roma Tomato, diced
1 Jalapenos (use serrano pepper for extra heat), finely diced
2 cloves of Garlic, minced
1⁄4 White Onion, finely diced
1⁄3 cup Chopped Fresh Cilantro
1⁄2 of a Lime, juiced
1⁄4 tsp Salt

 

Directions:

  1. Prepare your Mama’s jollof rice following the instructions on the jar.
  2. Clean and pat dry your chicken - season with holy grail spice blend and salt to your preference.
  3. Heat oil in a large skillet - add seasoned chicken thighs. Cook for 6 minutes on each side or until no longer pink.
  4. Remove chicken from pan and slice into thin strips. 
  5. Prepare your homemade guacamole - fork all the guacamole ingredients together.
  6. Build your burrito - with desired amount of cheese, prepared Mama’s jollof rice, chicken strips, black beans, guacamole, sour cream, shredded lettuce then wrap your burrito.
  7. Reheat your pan over medium low heat and place the burrito into the pan to sear for 2-3 minutes on each side.

This recipe will make 8 medium sized burritos! Enjoy
