Lobster Jollof Recipe
Items Needed:
1 jar of Mama's Jollof Simmer Sauce2 tsp Mama's Holy Grail Spice Blend
2 cups of Uncooked Rice
3 Lobster Tails
1 whole Shallots (optional)
2 cups Broth/Water
1 tsp Minced Garlic
1 tsp Olive Oil
1 tbsp Butter
½ tsp Parsley
Salt
Directions for Jollof Rice
- Heat oil in a saucepan over medium heat. Add sliced shallots(optional) and sauté until it starts to soften and caramelize between 4 to 5 minutes.
- Pour Jollof Simmer Sauce into the pot- stir content - simmer on medium-low 2 minutes.
- Add preferred rice - stir for 2 minutes.
- Pour broth/water into pot - salt to taste. Stir - cover pot with aluminum oil -cover the pot with a lid.
- Cook on low for 20 - 35 minutes depending on your preferred rice texture.
- Garnish with parsley and spring onions.
Directions for lobster
- In a mixing bowl, add clean/washed lobster tails
- Drizzle oil, add holy grail seasoning and minced garlic. Mix all together.
- Marinate for 30 minutes in the refrigerator.
- Heat a skillet with butter, place lobster gently into hot skillet
- Cook 6 minutes and each side
All Together: Plate your jollof rice and place the lobster on top of it.
If you want to add extra flare : In a small bowl, prepare garlic butter dressing with garlic, butter and fresh rosemary. Then drizzle the dressing all over your lobster jollof
Serve together and enjoy!!
